The Apple Cake with Custard Topping is like an apple pie, but the apples pieces here are on a bed of cake. The custard adds relish and smoothness to the cake. You can also make it without the custard topping.

Ingredients:
[ Standard Measure : 1 cup = 250 ml ]
- Maida [APF] – 120 gms
- Apple – 1 big
- Castor Sugar – 125 gms
- Oil – ⅓ cup
- Milk – ½ cup
- Eggs – 2
- Soda-bi-carb – 1 tsp.
- Lime Juice – 3 tsp.
- Vanilla Essence – 1 tsp.
- Salt – a pinch
- For the Custard Topping:
- Egg – 1
- Butter (melted) – ¼ cup
- Sugar – ⅓ cup
Step 1: Grease a 17 cm tart tin mould with butter and flour and line the base with parchment paper and keep aside.
Step 2: Set your oven to pre-heat at 180° C for 10 minutes.
Step 3: Take the maida, sugar, soda-bicarb and salt in a bowl and mix well with a mix.
Step 4: Add the milk, eggs and oil to the bowl and whisk to form a smooth batter.
Step 5: Add the vanilla essence and lime juice and mix lightly. Pour into your prepared tin.
Step 6: Peel and deseed the apple. Cut into ½ cm thin pieces.
Step 7: Top the batter with the apple pieces and bake at 170° C for 40 minutes (Check if the cake is ready by inserting a skewer into it. It should come out clean).
Step 8: Let’s make the custard whilst the cake is baking. Just whisk all the ingredient till they come together.
Step 9: Remove the cake from the oven and pour the custard over it. Bake for another 8 to 10 minutes till the custard is set. Then remove from the oven and cool completely.
Step 10: Demould the cake gently. Serve warm with some vanilla ice cream.
