Milk powder has a particular taste that has enthralled me throughout my lifetime. The yummy flavour enhances anything that you add it to. I use it sometimes in my tea or coffee to give it some extra creaminess and this time I decided to use it in a cake. The Milk Powder Cake will soon become your household’s favourite tea time cake.
Serves: 6 to 8 Persons

Baking Time: 30 to 35 Mins
Ingredients:
- Maida [APF] – 135 gms
- Salted Butter (melted) – 135 gms
- Granulated Sugar – 135 gms
- Milk Powder (dairy) – 45 gms
- Baking Powder – ¾ tbsp.
Step 1: Take the sugar and the milk powder in a bowl. Add 135 ml warm water and stir till the sugar dissolves (use a whisk).
Step 2: Set your oven to pre-heat at 180° C for 15 minutes. Grease a 8 x 6 inch baking dish with some butter and maida. Line the base with parchment paper. Keep aside.
Step 3: Add the baking powder to the maida and mix. Then sieve it using a fine mesh sieve.
Step 4: Add the sieved flour to the prepared milk mixture and fold in lightly using a silicon spatula using the cut and fold method (see note).
Step 5: Next, add the melted butter and mix well lightly. When well mixed, pour into the baking dish and bake in the pre-heated oven for 30 to 35 minutes (Check if the cake is done by inserting a toothpick or a knife into it. If it is done, it will come out clean). Cool and then demould.
Notes:
- Cut and Fold Method: One circular motion and then one strike right0000 through the center / diameter with gentle hands.
- If using unsalted butter, add ⅛ of salt to the maida.
- Do not use any essence in this recipe.
