The Caramel Marie Biscuit Pudding is the simplest of the Puddings on this site. Preparing the pudding is quick and easy if you have Marie biscuits at hand. Prep. Time: 15 Mins + Standing
Steaming Time: 35 to 40 Mins
Ingredients:
[ Standard Measure: 1 cup = 250 ml ]
- Hot Milk (Full Cream) – 500 ml
- Marie Biscuits – 6
- Eggs (at room temp.) – 3
- Sugar – ¼ cup
- Vanilla Essence – ½ tsp.
- For the Caramel:
- Sugar – 3 tbsp.
- Water – 1 tsp.
Step 1: Break the biscuits into pieces and take them in a bowl. Add the ¼ cup sugar and the hot milk. Soak for 30 minutes or till the milk turns lukewarm and the biscuits turn soft.
Step 2: Take the 3 tbsp. and the 1 tsp. water into a 5 inch round baking tin and place on medium heat and let it melt and caramelize. Spread the caramel evenly by moving the pan when it is melting. Then take off the heat (Do not brown to much or it will turn bitter). Allow it to cool and harden.
Step 3: Break open the eggs and add to a mixer jar with the whisking blade on. Pour the milk-sugar-biscuits mixture into the jar. Add the vanilla essence and then put on the lid and whisk till smooth.
Step 4: Next pour the whisked mixture into the mould and cover it with foil. Pre-heat a steamer with water and when hot, place baking tin into it and steam for 35 to 40 minutes till a toothpick / fork poked into the pudding comes clean.
Step 5: Remove from the steamer and allow to cool. To serve warm, press along the edges when slightly warm or run a knife around the sides and de-mould. To serve chilled place in the refrigerator after it has cooled down. Then de-mould and and serve chilled.
Hi I wanted to know if I can use Good life milk as I don’t have full cream milk please tell me as I want to make this thank you
By Good Life, I think you mean the Nandini toned milk. This isn’t full cream. You could reduce about 750 ml of the same to 500 ml and use. Or add 3 to 4 tbsp. of Milk Powder to the 500 ml milk and use – but in this case reduce the sugar a bit.
