Corned Beef Pie is an easy to make pie with minimal ingredients that are available in our Pantry. We make use of tinned corned beef for this recipe. The Corned Beef Pie is basic but filling and a one pot meal. It is similar to a Goan Mince Pie but easier to make. (For other pie recipes, click here)

Part 1 – Preparing the Corned Beef Filling:
[ Standard Measure: 1 cup = 250 ml ]
- Corned Beef – 1 Can (425 gms)
- Onions (finely chopped) – 4 big
- Tomatoes (finely chopped) – 2 small
- Green Chillies – 2 to 4
- Garlic (finely chopped) – 2 cloves (big)
- Black Pepper Powder – ¼ tsp.
- Turmeric – 1 pinch
- Palm / Toddy Vinegar – 1 tbsp. (optional)
- Oil – 2 tbsp.
- Salt – ½ tsp. or to taste
Step 1: Heat the oil in a pan and sauté the onion, garlic and green chillies on medium heat till the onions turn soft. Add the tomatoes and turmeric powder and cook for 5 minutes.
Step 2: Add the corned beef. Mash and sauté for 2 minutes. Add ½ tsp. salt and cook covered for 3 to 4 minutes on low heat. Then open the lid and add the vinegar. Mix and continue cooking till most of the moisture dries out (don’t dry it too much). Add the pepper, mix and keep aside.
Part 2 – Preparing the Potato Mash:
- Potatoes – 1 kg
- Butter (salted) – 2 tsp.
- Egg Yolk – 1
- Salt – 1 tsp. or to taste
Step 3: Wash the potatoes well to remove any dirt. Peel the potatoes and boil them in a large pot (Add potatoes, salt and cook till done but not mashy).
Step 4: Remove / strain the cooked potatoes and place them on a large plate. Grate the potatoes whilst still hot / warm. Add the butter, salt and egg yolk and then knead the grated potatoes with your knuckles so that there are no lumps and a smooth dough / mash is formed.
Part 3 – Assembling the Pie:
- Egg Yolks – 2
- Bread Crumbs – as needed
- Butter – 50 gms
Step 5: Grease a baking dish ( 8 inch – preferably glass) with a little butter.
Step 6: Divide the potato mash into two portions and use one portion to line the bottom of the baking dish.
Step 7: Next, spread the corned beef filling.
Step 8: Then top with the remaining potato mash. Spread evenly and make a design with the fork as show in the picture. Brush the top with the egg yolk. (you can choose to bake it right here or move to the next step)
Step 9: Sprinkle some bread crumbs in a thin layer to cover the top layer (The crumbs will give it a slight crunch. Do not use too much of Bread Crumbs.)
Step 10: Put small pieces of butter or use a teaspoon and place the butter as shown in the picture.
Step 11: Pre-heat your oven to 200° C for 15 minutes and then bake the pie at 180° C for 30 to 35 minutes till the top layer gets a nice golden colour. Serve hot.
Notes:
- It is important to work with the potatoes when they are hot as they are more pliable.
- Always use aged / old potatoes to make the mash and check to see that the skin does not have the slightest of green colour.
