Who doesn’t like Crispy Fried Fresh Bombay Ducks [Bombils/Bummalos] ? If you have ever eaten these melt in the mouth fish you are hooked ? And when they are crispy fried they taste even better. Baking Time: 4 to 5 Mins per batch
Ingredients:
Step 1: Clean and debone 10 medium Bombay Ducks. (You can watch the ‘How to’ video here). Keep the cleaned and deboned Bombils in the refrigerator for an hour.
Step 2: Later, remove from the refrigerator, drain and place on a plate. Apply ½ tsp. Salt, Turmeric Powder, Ginger-Garlic Paste, Red Chilly Powder and the Juice of the Lime. Apply to all the pieces evenly & leave aside for not more than 10 minutes.
Step 3: For the coating, take 1 cup Chiroti Rawa (Fine Semolina) and ½ cup Cornflour and mix well. Coat a batch of bombil pieces evenly (just before frying) dust off extra rawa/flour.
Step 4: Place a griddle on heat and when hot add oil for frying. Once the oil is hot, place the fish pieces, one by one carefully onto the griddle. Fry a few pieces at a time on medium heat on both sides till crisp & golden.
Step 5: Drain onto a plate lined with kitchen towels. Coat the next batch and continue.
