Pork and Beef Assado

The Pork and Beef Assado is a pot cooked roast. The flavours of the pork and the beef intermingle and make a luscious roast that can be served as an appetizer or a side with the Goan Pressure Cooker Pea Pulao (click here) or even be used to make delicious sandwiches.

Serves: 10 to 12 Persons

Prep. Time: 15 Mins + Marination

Cooking Time: 55 to 60 Mins

Ingredients:

[ Standard Measure: 1 cup = 250 ml ]

  • Boneless Pork – 1 kg
  • Boneless Beef – 750 gms
  • For the Marinade:
    • Ginger – 3 inch
    • Garlic – 30 cloves
    • Black Pepper Corns – 40
    • Cloves – 25
    • Cinnamon – 3 inch
    • Cumin Seeds – ¼ tsp.
    • Turmeric – 1 tsp.
  • Dry Red Chillies (broken) – 4
  • Toddy Vinegar – ¼ cup
  • Sugar – 1 tbsp.
  • Oil – 2 tbsp.
  • Salt – 1 ½ tbsp. or to taste

Step 1:     Wash the meat and drain well. Cut into big chunks. Apply 1 ½ tbsp. salt and leave aside for 30 minutes.

Step 2:     Grind the ingredients listed under marinade into a fine paste using the vinegar and sugar.

Step 3:     Poke the meat which has rested for 30 minutes with a fork all over. Take it in a bowl and then apply the marinade. Cover the bowl and place it in the refrigerator to marinate overnight.

Step 4:     The next day, take the meat out of the refrigerator and allow it to come to room temperature.

Step 5:     Heat the oil in a pressure cooker and add the red chillies and sauté for 30 seconds. Then add the meat chunks and sear them on high heat for 8 to 10 minutes on all sides, till the colour of the meat changes and its juices are released.

Step 6:     Add ¼ cup water to the bowl used to marinate and stir in all the marinade and add to the pressure cooker (you may need to use more than ¼ cup water depending on the amount of juices released by the meat).

Step 7:     Put on the lid of the pressure cooker and cook on high heat till the 1st whistle. Then switch to low heat and cook for another 25 minutes (depending on the cut of meat and size of chunks).

Step 8:     Switch off the heat and let the pressure drop naturally. Then open the pressure cooker and check the meat for doneness. The pork will be done. Remove it out and keep aside. Put on the lid of the pressure cooker once again and cook the beef for another 15 minutes on low heat.

Step 9:     After the beef is cooked, add the pork to it and continue cooking with the lid open till all the liquids dry out or thicken. Slice and serve with some sliced and fried potatoes.

Notes:

  • Cooking time varies based on the cut of meat, type of pressure cooker you are using. You will have to play that part out by instinct.
  • This dish turns out better if you slow cook it without using a pressure cooker. But it should take about 2
