Rawa Porridge / Rava Kheer is an anytime gruel made by mothers for their babies or toddlers and also made by mothers for their daughters who have just entered motherhood. The porridge is nourishing and a quick fix to combat those hunger pangs. A simply simple motherly recipe.
Serves: 2 to 4 Persons

Ingredients:
[ Standard Measure: 1 cup = 250 ml ]
- Rawa – 2 tbsp.
- Full Cream Milk (hot) – 2 ½ cups
- Sugar – 3 tbsp.
- Green Cardamom (bruised, crushed) – 3 to 4
- Pistachios or Other (chopped) – 6
- Pure Ghee – 2 tbsp.
- Salt – a teeny weeny pinch
Step 1: Heat the ghee in a heavy bottomed vessel and roast the rawa for 2 minutes on medium heat till you get a nice aroma.
Step 2: Then add the crushed cardamom and roast for another 1 minute.
Step 3: Add 2 cups of the hot milk and stir continuously for 2 to 3 minutes, so that the rawa does not stick to the vessel.
Step 4: Add the sugar and salt and cook till the rawa is done.
Step 4: Finally add the remaining hot milk and the chopped nuts and cook for a minute. Switch off the heat and serve warm.
