Eggless Chocolate Poke Cake

The Eggless Chocolate Poke Cake is a fun to make cake. The Spiderman inspired web design makes it more attractive and you could place a small Spiderman figurine to make a birthday theme cake. It’s a rich chocolate cake using cocoa and milk chocolate that kids will enjoy. Chocolate loving young and old adults will also love this cake and you will have trouble keeping them all away from it.

Yield: 1200 gms

Prep. Time: 20 Mins

Baking Time: 30 Mins

[Standard Measure – 1 cup = 250 ml]

Dry Ingredients:

  • Maida [APF] – 1 ½ cup
  • Cocoa – ½ cup
  • Powdered Sugar – 1 cup
  • Baking Soda – 1 tsp.
  • Baking Powder – ½ tsp.
  • Salt – ½ tsp.

Wet Ingredients:

  • Milk (lukewarm) – 1 cup
  • White Vinegar [Acetic Acid] – 2 tsp.
  • Vanilla Essence – 1 tsp.
  • Vegetable Oil (neutral taste) – ½ cup

For the Chocolate Sauce:

  • Milk – 1 ½ cup
  • Corn Flour – 1 tbsp.
  • Cocoa – 2 tbsp.
  • Milk Chocolate (chopped) – 150 gms
  • Sugar – 3 tbsp.
  • Butter – 2 tbsp.

For the White Chocolate Sauce (optional):

  • White Chocolate (chopped) – ¼ cup
  • Milk Cream – 2 tbsp.

Step 1:     Mix all the dry ingredients and sift them twice.

Step 2:     Mix the vinegar into the milk and leave aside for 10 minutes.

Step 3:     Pre-heat the oven at 180°c for 15 Minutes.

Step 4:     Add the oil to the curdled milk and mix well. Add this to the dry ingredients in a bowl and whisk on low speed for 40 to 50 seconds till smooth. Then add 1/4 cup hot water and mix for a few seconds (Use an electric beater or stand mixer or a hand whisk).

Step 5:     Grease an 8-inch square oven proof dish (preferably glass) with butter. Pour the cake batter into it. Tap the pan to remove any air bubbles.

Step 6:     Bake at 180°c for 25 to 30 minutes till a toothpick comes clean. Take out of the oven and allow to cool.

Step 7:     Take a fork or toothpick or skewer and poke the cake all over. Keep aside.

Step 8:     Dissolve the corn flour and cocoa in milk. Place on low heat and cook stirring continuously. Add the sugar and cook till it thickens. Add the chocolate and switch off the heat. Add butter and mix well. Then pour this sauce over the cake.

Step 9:     Use a double boiler (click here for reference) and melt the white chocolate. Add the milk cream and mix.

Step 10:     Take the milk chocolate mixture in a piping bag and snip the top. Draw lines across the pudding as shown in the picture. Then take a toothpick and draw lines in the opposite direction as shown in the picture. Cut into squares and serve.
