Tooti Frooti Muffins

Make these Tutti Fruti / Tooti Frooti Muffins as a Tea Time Snack or as tiffin fillers for your kids. Kids especially will love them. They are not too complicated to bake and also do not take too much time to make. (for a tooti frooti cake, click here or an eggless tooti frooti cake, click here)

Yield: 12 Muffins

Prep. Time: 15 Mins.

Baking Time: 20 Mins.

Ingredients:

  • Maida [APF] – 1 cup
  • Powdered Sugar – ¾ cup
  • Butter (salted, at room temp.) – 100 gms
  • Eggs (at room temp.) – 2
  • Milk – 3 to 4 tbsp.
  • Vanilla Essence – ¼ tsp.
  • Tooti Frooti – 2 tbsp. + a few
  • Baking Soda [Soda-bi-carb] – 1 tsp. (see note below)

Step 1:     Coat the tooti frooti / tutti frutti with 1 tsp. flour and keep aside.

Step 2:     Mix the baking soda and the flour and sieve twice and keep aside.

Step 3:     Whisk the butter and the sugar with a hand beater till creamy.

Step 4:     Add the eggs one at a time and whisk for a few seconds each time. Then add the vanilla essence and whisk for a few seconds.

Step 5:     Mix / Fold in the sieved flour in two parts using a spatula.

Step 6:     Add the milk and beat lightly with the beater till smooth.

Step 7:     Fold / Add the flour coated tooti frooti into the batter / dough and mix.

Step 8:     Line your muffin tray with paper muffin liners and scoop 2 tbsp. of the batter into the paper liners. Tap the tray 2 times to settle the batter. Place 2 to 3 pieces of tooti frooti on the top of each muffin.

Step 9:     Pre-heat your oven to 180° C for 10 minutes and then bake the cupcakes at 180 ° C for 20 minutes. Once done, remove the cakes from the oven and place on a grill to cool.

Note:

  • Use only SBC. It gives a lighter texture to the mixture.
