With the kids at home all of the 24 hours amidst the COVID-9 lockdown in India, the easy recipe for the Jumbo Chewy Chocochip Cookies came very much to my rescue. These are not too rich – Just the right amount. And I was able to make these cookies to satiate their snack cravings in a jiffy. Thankfully, I had a stock of the ingredients used here. Many an avid baker will also have these few ingredients at hand and I’m sure you’ll like to make these quick cookies. BTW, we shared the three cookies, one for Sam, one for Ivan and Sean and I shared half each 🙂
Yield: 3 Cookies
Prep. Time: 10 Mins.
Baking Time: 15 Mins.
Ingredients:
- Maida [APF] – 1 cup
- Sugar (brown or castor) – ½ cup
- Choco Chips (dark) – ⅓ cup or more
- Milk – 3 tbsp.
- Butter (salted, soft) – 3 tbsp.
- Vanilla Essence – ¼ tsp.
- Soda-bi-carb – ¾ tsp.
Step 1: Take the maida, butter, sugar, SBC, milk and vanilla essence and knead to form a soft dough.
Step 2: Add the chocochips and mix. Divide into three portions (balls) and flatten a bit and place on a tray lined with parchment paper far apart from each other (you can top up with more chips).
Step 3: Preheat the oven to 180° C for 15 minutes and the bake for 15 minutes till golden (the cookies will spread out and flatten during baking).
Step 4: Remove the cookies and place on a rack to cool.
