The Easy Chicken Pulao, just like any pulao, is a one pot meal. We love our pulaos. They are less time consuming and delicious. Though a pulao needs no accompaniment, you can always serve a salad on a raita on the side. (For another version, click here)

Cooking Time: 35 to 40 Mins

Ingredients:

[ Standard Measure: 1 cup = 250 ml ]

  • Chicken Drumsticks (skinless) – 700 gms
  • Basmati Rice – 2 cups
  • Onions (sliced) – 3 medium
  • Tomatoes (chopped) – 2
  • Ginger-Garlic Paste (fresh) – 1 tbsp.
  • Green Chillies (slit) – 3
  • Red Chilly Powder – ½ tsp.
  • Turmeric Powder – ½ tsp.
  • Garam Masala Powder – ½ tsp.
  • Stock Cubes – 2 small
  • Cloves – 10
  • Green Cardamom – 3
  • Black Pepper Corns – 12
  • Cinnamon – 2 inch
  • Bay Leaf – 3
  • Oil – 5 tbsp.
  • Salt – 2 tsp.

Step 1:     Wash and drain the chicken pieces well. Apply 1 tsp. salt and leave aside. Keep all other ingredients ready.

Step 2:     Wash the rice and soak in 2 cups of water for 20 mins.

Step 3:     Meanwhile, take a utensil large enough to prepare the pulao. Place it on heat and add 5 tbsp. oil. Add the bay leaves, cloves, cardamoms, cinnamon and black pepper corns. Stir for a few seconds on medium heat and then add the sliced onions. Sauté the onions till soft.

Step 4:     Now add the ginger-garlic paste and sauté for a minute. Now add the tomatoes and sauté till the tomatoes turn soft.

Step 5:     Add the turmeric and red chill powders and the green chillies and sauté for 2 minutes.

Step 6:     Next add the chicken and sauté till the pieces change colour.

Step 7:     Drain the rice and add to the vessel. Mix lightly so that the grain is coated with the masalas. Then add 3 ½ cups of hot water, the crushed stock cubes and let the mixture come to a boil.

Step 8:     Add 1 tsp. salt, mix and check for taste. Add more if required. Sprinkle the garam masala and cook covered on low heat for 15 to 18 minutes till the rice and the chicken is cooked.
