Aam Panna is a refreshing summer drink made with raw mangoes and mint. This recipe will show you how to make the syrup concentrate which you can then store and use whenever you feel like it. Pour some Aam Panna concentrate over some ice cubes and mix with cold water to make a glassful. This drink is strictly a summer drink as it helps to cool the body. Ingredients:

[ Standard Measure : 1 cup = 250 ml ]

  • Sour Raw Mangoes (big) – 2 (650 gms)
  • Mint Leaves – ½ cup
  • Sugar – 1 ½ cup
  • Roasted Cumin Powder – 2 tsp.
  • Indian Black Salt [Kala Namak] – 1 tsp.
  • Salt – 1 tsp.

Step 1:     Wash the mangoes and cut off the topmost part near the stem (see pic). Then place the mangoes in a pressure cooker with 1 cup water on high heat till the 1st whistle and then on low for another 2 whistles.

Step 2:     Once the pressure drops naturally, open the lid and take the mangoes out (the mangoes will have changed colour). Discard the skin and seed and collect the pulp.

Step 3:     Grind the pulp with ½ cup mint, 1 ½ cup sugar, cumin powder, salt, and black salt and 1 cup water to a smooth paste.

Step 4:     Transfer the ground mango-mint paste to a heavy bottomed pan and cook uncovered on medium low heat whilst stirring in between for 25 to 30 minutes till it thickens.

Step 5:     Cool the concentrate completely and then store in a sterile jar. Use as required.

Note:

  • To make a glass, add 1 to 1 ½ tbsp. of concentrate and ice cubes to a glass. Top up with 150 to 200 ml cold water and stir. Garnish with a sprig of mint.
