I have named this preparation of bhaji as Cabbage & Potato Bhaji – Goan Soup Style because it tastes very much like the simple vegetable soup prepared in Goan households. This vegetable has the distinct flavour of stock cubes and is plain and simple. It will serve as a good side with a spicy Goan Ambot Tik or even by itself with chapatis.
Serves: 2 to 4 Persons
Prep. Time: 20 Mins
Cooking Time: 25 to 30 Mins
Ingredients:
Step 1: Heat the oil in a pan and sauté the onion on medium heat till translucent.
Step 2: Then add the tomato and cook on medium high heat till the tomato turns mushy.
Step 3: Add the stock cube, crush and mix well. Then drain and add the potato cubes and mix again.
Step 4: Finally add the shredded cabbage. Sprinkle 2 to 3 tbsp. of water and the ¼ tsp. salt. Cover and cook on low heat for 12 to 15 minutes (till the potatoes are done). Check in between and give the vegetables a mix. Serve hot.
