Goan Pressure Cooker Pea Pulao

Enter a scenario when you have sudden guests at home. It’s around lunch time and you cannot send them away without having lunch. The Goan Pressure Cooker Pea Pulao is that quick fix. You can make this one pot meal in no time and can serve with any side (like Goan Choriso) or even just a pickle.

Serves: 4 to 6

Cooking Time: 15 Mins

Ingredients:

[ Standard Measure : 1 cup = 250 ml ]

  • Basmati Rice –1 ½ cups / 350 gms
  • Peas – ¼ cup
  • Onions (chopped) – 2 small
  • Tomato (chopped) – 1 small
  • Cinnamon – 1 inch
  • Green Cardamom – 3
  • Cloves – 9
  • Black Pepper Corns – 10 to 12
  • Turmeric Powder – a pinch
  • Veg Stock Cube – 3 small
  • Butter – 2 tbsp. / 40 gms
  • Oil – 2 tbsp.
  • Salt – ½ tsp. or to taste

Step 1:     Wash the rice under running water. Then soak in enough water for 15 minutes. Dissolve the stock cubes in 600 ml hot water (see note below). Keep aside.

Step 2:     Meanwhile, heat 2 tbsp. oil in a pressure cooker. Add the whole spices and let them splutter for a few seconds on medium heat. Then add the onion and sauté till light pinkish.

Step 2:     Next add the tomatoes and sauté for 2 to 3 minutes. Add the peas. Sauté for a minute.

Step 3:     Add 1 tbsp. butter. Drain and add the rice. Sauté lightly till each grain is coated with the oil and butter.

Step 4:     Add the hot stock (stock cubes dissolved in water) and stir. Taste (The broth will be a bit salty. Don’t worry the rice will absorb the saltiness). Adjust if required.

Step 5:     Put on the lid of the pressure cooker and pressure cook on high heat till 2 whistles. Then switch off the heat and let the pressure drop naturally.

Step 6:     Open the lid of the pressure cooker and add 1 tbsp. butter. Fluff the rice with a fork. Serve hot.

Note:

  • Rice : Water Ratio for this recipe = 1 cup rice   :   1.75  cups water
