Capsicum Stuffed with Beef Mince

The Capsicum Stuffed with Beef Mince prepared with fresh mince tastes yummy. Capsicum stuffed with mince enhances the flavour of the mince as well as adds to the presentation. Simple to make and good to serve at a party or get-together . You can serve it as an accompaniment with rice and curry or standalone with bread. This recipe was shared to me by my friend and member of Madhouse Balcao (read about me), Betty Pires. It is her Grandma’s recipe.

Serves: 6 to 8 Persons

Prep. Time: 15 Mins.

Cooking Time: 55 to 60 Mins.

Ingredients:

[Standard Measure – 1 cup = 200 ml]

  • Beef Mince (coarse) – 500 gms.
  • Onions (finely chopped) – 3 medium sized
  • Tomato (finely chopped) – 1 medium sized
  • Capsicum (halved) – 6 to 8 medium sized
  • For the Green Masala:
    • Green Corriander – ½ cup (tightly packed)
    • Green Chillies – 2 to 3
    • Garlic – 6 big cloves
    • Cumin Seeds – ¼ tsp.
    • Cloves – 8
    • Cinnamon – ½ inch
    • Tamarind – 1 ½ small marble sized balls.
  • Palm Vinegar – 1 tbsp.
  • Lime Juice – 1 tsp.
  • Turmeric Powder – 1 tsp.
  • Sugar – ½ tsp. (optional)
  • Oil – 4 tbsp.
  • Salt – 1 tsp.

For the Stuffing:

Step 1:     Grind the ingredients for the masala using a little water to a fine paste.

Step 2:     Wash the mince and drain well. Add salt, turmeric and lime juice and mix well. Leave aside.

Step 3:     Heat 2 tbsp. oil in a pan and sauté 2 of the 3 chopped onions on medium heat till soft. Next add the mince and sauté on low heat for 8 to 10 minutes till the juices are released.

Step 4:     Keep 2 tbsp. of the green masala aside and add the remaining to the pan. Mix well and add ¼ cup warm water. Cook covered on low heat for 15 minutes.

Step 5:     Next add the vinegar and sugar (optional). Check for salt and add if required. Cook uncovered till all the liquid dries up. Leave it to cool.

Assemble the Stuffed Capsicum:

Step 6:     Wash and dry the green bell peppers. Either cut them in two halves or chop the top off. Sprinkle a little salt on the inside of the capsicum and stuff / spoon the mince into the shallow of the capsicum.

Step 7:     Take a shallow non-stick pan and heat 1 tbsp. of oil and sauté the remaining onion till soft. Next add the tomato and saute for 2 minutes on low heat. Add the reserved green masala and fry till the oil separates. Add ½ tsp. salt, 2 to 3 tbsp. water and mix well.

Step 8:     Arrange the stuffed capsicum in the pan. Drizzled a tbsp. of oil over it and cook covered on low heat for 15 to 20 minutes.
