The drumstick is generally used in the sambhar in the south of India. You can also enjoy the distinct bitter-sweet taste of the drumstick by preparing it the way this recipe will teach you. Although it is a bit cumbersome eating drumsticks, if you love food, you have to try it out this way. You can serve this dry preparation of drumsticks and potatoes as a side dish or with chapatis.
Serves: 4 to 6 Persons

Cooking Time: 18 to 20 Mins.
Ingredients:
- Drumsticks – 3 big
- Potatoes – 3 small
- Onions (finely chopped) – 2 small
- Green Chillies (chopped) – 2
- Coconut (grated) – 2 tbsp.
- Turmeric – ¼ tsp.
- Hing [Asafoetida] – a pinch
- Mustard Seeds – ½ tsp.
- Oil – 1 tbsp.
- Salt – ¼ tsp.
Step 1: Peel the drumsticks lightly and cut into 3 to 4 inch pieces and keep aside.
Step 2: Peel the potatoes and cut into wedges. Keep aside immersed in salted water.
Step 3: Heat the oil in a pan and add when hot, add the mustard seeds. Once the seeds start spluttering, add the green chillies, hing and sauté for a few seconds on low heat. Next add the onions and sauté till soft.
Step 4: Add the turmeric to the pan and mix. Drain and add the potatoes and sauté for 2 minutes. Next add 50 ml water and cover and continue cooking on low heat for 5 to 6 minutes.
Step 5: Finally add the drumsticks and ¼ tsp. salt. Cook covered for a further 8 to 10 minutes till the drumsticks and potatoes are done. Switch off the heat and garnish with the grated coconut.
