Get your hands on some Jumbo Prawns to make crispy fried Masala Stuffed Prawns. Serve them as a starter or as an accompaniment. They taste yummy.
Serves: 4 to 6 Persons
Prep. Time: 20 Mins.
Cooking Time: 10 Mins.
Ingredients – Part I:
- Large Prawns – 500 gms.
- Turmeric Powder – ½ tsp.
- Ginger-Garlic Paste – ½ tbsp.
- Bamboo Skewers (soaked in water for 30 Mins.) – a few
- For the Stuffing Masala:
- Kashmiri Red Chillies – 4
- Onion – 1 small
- Cloves – 3
- Cinnamon – ½ inch
- Cumin Seeds – ¼ tsp.
- Black Pepper Corns – 6
- Garlic – 4 cloves
- Vinegar – 2 to 3 tbsp.
- Oil – 4 to 5 tbsp.
- Salt – 1 + ¼ tsp. or to taste
Step 1: Wash the prawns well. Using kitchen scissors cut the shell along the back from head to tail. Use a knife and make a deep slit in the flesh of the back and devein.
Step 2: Apply ½ tsp. salt, turmeric and ginger garlic paste to the prawns and keep aside for 15 to 20 minutes.
Step 3: Grind all the ingredients listed under masala to a fine paste using a little water if required.
Step 4: Place a pan on heat and put in 1 tbsp. of oil. Sauté the ground masala for 2 to 3 minutes on low heat. Take off the heat and allow to cool.
Step 5: Take the skewers and insert along the length of each prawn from the tail and through the head (this is so that the prawns do not curl when frying).
Step 6: Stuff 1 tsp. of the masala in the cavity of each prawn and close.
Step 7: Shallow fry the prawns on medium heat on all sides using the remaining oil till they are golden brown.
