Malabar Omlette Curry

Fry an omlette and make a curry? The Malabaris do exactly the same. Like all Keralites, they too make ample use of coconut and hence there is coconut in the curry and also in the omlette. It tastes quite good, a different take, kinda like the Goan Ros Omlette. Serve the Malbari Omlette Curry with hot rice.

Serves: A Family of Four

Prep. Time: 10 Mins.

Cooking Time: 30 to 35 Mins.

Ingredients:

[Standard Measure – 1 cup = 200 ml.]

  • For the Gravy:
    • Onion (finely chopped) – 1 big
    • Tomatoes (finely chopped) – 2 big
    • Green Chillies (finely chopped) – 2
    • Ginger-Garlic Paste – 2 tbsp.
    • Coconut (grated) – ½ cup
    • Corriander Leaves (finely chopped) – 3 to 4 tbsp.
    • Chilli Powder – ½ to ¾ tbsp.
    • Garam Masala Powder – ½ tsp.
    • Turmeric Powder – ½ tsp.
    • Stock Cube – 1 small (optional)
    • Oil – 3 tbsp. + 1 tsp.

Step 1:     Heat 1 tsp. oil in a frying pan and roast the coconut on low heat till it changes colour. Be careful not to burn it. Once cold, grind fine using ½ cup water and leave aside.

Step 2:     In a pan suitable to make the gravy, heat 3 tbsp. oil and sauté the onion and the green chillies on medium heat till the onion turns a light golden. Add the ginger-garlic paste and sauté till the raw smell disappears. Next add the powder masalas except the garam masala, tomatoes, salt and 1 cup water and cook covered  on low heat for 8 to 10 minutes.

Step 3:     Now add the garam masala powder, roasted coconut paste, stock cube (optional) and another 1 to 1 ½ cups of warm water and cook covered on low heat till the curry comes to a boil. In the meanwhile, prepare the omlette.

Ingredients:

  • For the Omlette:
    • Eggs – 4
    • Onions (finely chopped) – 2 small
    • Green Chillies (finely chopped) – 2 (optional)
    • Grated Coconut – 2 tbsp.
    • Turmeric Powder – ¼ tsp.
    • Red Chilli Powder – ½ tsp.
    • Oil – 2 tsp.
    • Salt – ½ tsp. or to taste

Step 4:     Break the eggs in a bowl and add all the ingredients for the omlette, except the oil, into the bowl. Whisk the mixture well.

Step 5:     Heat 1 tsp. oil in the pan in which you roasted the coconut and fry half of the omlette mixture. Do the same for the second half (make two omlettes).  Cut the omlette into 2 inch strips and keep aside.

Step 6:     Once the gravy comes to a boil, add the omlette strips to the gravy and boil for a few seconds. Garnish with green corriander.

Note:

  • Use Spicy Chilly Powder variety if possible.
