Some people find cluster beans slightly bitter to taste. Therefore, preparing the vegetable in combination with black chickpea sprouts will make it more palatable for them. This Maharashtrian kala chana gavar bhaji recipe makes use of goda masala and kanda lasun masala which is usually available with your grocer or supermarket store.

Ingredients:
[Standard Measure – 1 cup = 200 gms.]
- Cluster Beans [Gavar] – (cleaned and broken into 1 inch pieces) – 2 cups
- Black Chana Sprouts – ½ cup
- Goda Masala – 2 tsp.
- Kanda Lasun Masala – 2 tsp.
- Turmeric Powder – ¼ tsp.
- Asafoetida – a pinch
- Coconut (grated) – 2 tbsp.
- Jaggery – 1 tsp.
- Mustard Seeds – 1 tsp.
- Oil – 2 tbsp.
Step 1: Pressure cook the kala vatana sprouts for 2 to 3 whistles till cooked and set aside.
Step 2: Take the cluster beans in a pan. Sprinkle 2 to 3 tbsp. water on it and steam it covered on low heat for 4 to 5 minutes. Once tender switch off the heat.
Step 3: Heat oil in a kadai and add the mustard seeds, turmeric and hing. As soon as the mustard seeds start spluttering add the goda masala and sauté for a minute on low heat.
Step 4: Add the steamed gavar and boiled kala vatana and the kanda lasun masala, jaggery and salt and give it a quick stir. Cook covered on low heat for 6 to 8 minutes. Garnish with of the freshly grated coconut.
Serve with chapatis.
