Chicken spread is easy to make and uses a very few ingredients. It can be used to make sandwiches and snacks specially for children. You can use it to make savoury starters like forminhas or small pastry cones for your parties also. Prep. Time: 15 Mins.

Cooking Time: 12 to 15 Mins.

Ingredients:

  • Boneless Chicken Breast – 450 gms.
  • Spring Onion Whites – 2 to 3 medium
  • Green Chillies (finely chopped) – 3 to 4
  • Green Corriander (finely chopped) – 2 tbsp.
  • Black Peppercorns – 1 tsp.
  • Bay Leaves – 2
  • Mayonnaise – 6 tbsp. or to taste
  • Spicy Ketchup / Sriracha Sauce – 2 tbsp.
  • Salt – 1 tsp. or to taste

Step 1:     Boil the chicken with salt, bay leaves, peppercorns and 200 ml. water till the chicken is fully cooked. Separate the chicken from the stock and let it cool.

Step 2:     Once the chicken has cooled, chop roughly and then grind coarsely. Transfer to a bowl and add the mayonnaise, sriracha sauce and finely chopped spring onion. Also add the green chillies and green corriander. Mix well.

Transfer to a clean jar and keep in the refrigerator for use up to 4 days.
