Bombay ducks stuffed with Goan Prawn Recheio and batter fried to make a crispy and yummy appetiser. Do try this dish out very soon.

Ingredients:
- Bombay Ducks [Bombil] – 8 medium sized
- Lime – 1 big
- Turmeric Powder – ½ tsp.
- Chilli Powder – ½ tsp.
- Ginger-Garlic Paste – 1 tsp.
- Prawn Recheio (click here) – ½ portion
- Maida [Refined Flour] – 4 tbsp.
- Egg – 1
- Oil – to deep fry
- Salt – 1 ½ tsp. or to taste
Step 1: Clean the bombils and slit them open. Remove the bone from the center. Spread them on a cutting board and keep some weight over them to remove the excess water (20 to 30 Mins.)
Step 2: Apply ginger-garlic paste, chilli powder, turmeric, 1 tsp. salt and lime juice and leave aside to marinate for 15 minutes.
Step 3: When the bombils have marinated, take a tablespoon of the stuffing and spread on the inside of one flattened bombil. Take another bombil and cover it. Press along the sides. Do this for all the bombils till you have four assembled pieces.
Step 4: Whisk the egg with ½ tsp. salt and add the refined flour to it. Whisk it to make a smooth lump free batter.
Step 5: Heat oil in a pan suitable for deep frying. When the oil is hot, reduce the heat. Dip each assembled piece into the batter and deep fry for 3 to 4 minutes on medium heat, till light golden and crisp.
