The Goan cafreal masala can be made and stored in the refrigerator and can be used to marinate chicken and fish before frying it. Don’t miss out the jaggery as it gives the meat a nice glaze and also renders a slight sweetness to the completed dish.

Ingredients:

  • Green Corriander Leaves – 100 gms.
  • Garlic – 12 cloves
  • Ginger – 1 ½ inch
  • Light Green Chillies – 4 to 6
  • Turmeric Powder – ½ tsp.
  • Black Peppercorns – 1 tsp.
  • Corriander Seeds – 1 tsp.
  • Cloves – 6 to 8
  • Cinnamon – 1 ½ inch
  • Cumin Seeds – ½ tsp.
  • Aniseed – ½ tsp.
  • Palm or Sugarcane Jaggery – 1 ½ to 2 tbsp.
  • Palm Vinegar – 40 to 50 ml
  • Salt – ½ tsp.

Grind all the ingredients in the mixer-grinder to a smooth paste. Store in the refrigerator and use as required.
