This Goan preparation is like a dry potato bhaji available all over India in many variants. It is popular in Goa as a breakfast meal. The Goan potato patol bhaji can be enjoyed with Goan pav or puris. People also have it in combination with White Pea Ros (click here for the pea ros recipe)
Serves: 2 to 3 Persons
Prep. Time: 15 Mins.
Cooking Time: 8 Mins. (active) + 10 Mins. (passive)
Ingredients:
- Potatoes (boiled and peeled) – 4 (300 gms.)
- Onion (finely chopped) – 1 medium
- Green Chillies (chopped) – 2 to 3
- Curry Leaves – 6
- Cumin Seeds – ½ tsp.
- Asafoetida (hing) – a pinch
- Turmeric Powder – ¼ tsp.
- Ghee – 1 tbsp.
- Salt – 1 tsp. or to taste
Step 1: Chop 3 potatoes into small pieces and mash the one remaining.
Step 2: Heat ghee in a pan, add the cumin, hing, curry leaves and sauté for a minute on medium heat.
Step 3: Add the green chillies and onion and sauté till the onion is translucent.
Step 4: Add the chopped potatoes and turmeric. Sauté for 2 to 3 minutes. Add the mashed potato, 1 cup warm water, sugar and 1 tsp. salt or to taste. Cover and cook on low heat for 12 to 15 minutes.
