The Pineapple Dessert : Pineapple Freeze is a cold pineapple dessert that requires no baking and uses a few readily available ingredients. It is rich and creamy without any artificial flavouring.
Servings: 9 to 12 Portions
Prep. Time: 30 Mins. (active) + 30 Mins. (refrigeration) + 2 Hours (freezing)
Ingredients:
Step 1: Whip the cream using an electric beater with ½ cup sugar in a bowl. Cover and keep to chill in the refrigerator for 30 minutes.
Step 2: Drain the pineapple slices well and chop them finely. Reserve a few whole pineapple slices for decoration. Place the chopped pineapple pieces on a strainer for 15 minutes so that all the juices drain out.
Step 3: Remove the cream from the refrigerator. Add the remaining sugar and whip till it is creamy and double in volume.
Step 4: Fold in the pineapple pieces gently into the whipped cream using a silicone spatula.
Step 5: Blend the milk and condensed milk. Dip the biscuits in this mixture and line the base of a glass dish or tray with the biscuits. (Tray Size: 8 x 8 inch)
Step 6: Divide the cream pineapple mixture into two portions. Pour one portion over the biscuits in the tray and spread evenly. Place another layer of biscuits as in Step 5. Pour the second portion and spread evenly so that you have a biscuit-cream-biscuit-cream layering. Decorate with the whole pineapple slices.
Step 7: Freeze for at least 2 hours before serving. Remove from the freezer only when you are ready to serve. Top with candied walnuts.
