Serves – A Family of Four

Ingredients:

[ Stand Measure: 1 cup = 250 ml ]

  • Basmati Rice – 1 ½ cup (wash and soak for 10 minutes)
  • Water – 2 litres
  • Salt – 1 tsp. or to taste
  • Star Anise or Mace – 1
  • Oil – 1 tsp.

Step 1:     Wash the rise gently but thoroughly and soak for 10 minutes.

Step 2:     Heat the water in a suitable vessel. Add the oil to the water and bring it to a boil.

Step 3:     Strain the soaked rice and add to the boiling water. Add the salt and star anise / mace. Cook till the rice is ¾ done (about 5 to 7 minutes).

Step 4:     Strain the rice and spread on a large plate. Let it cool fully. Keep in the refrigerator for 1 to 24 hours before using. Use in your dish directly from the refrigerator (the grains don’t break easily while tossing).
